Kale Apple Slaw with homemade Dressing

So these days, I am consistently trying to incorporate more veggies. With the rise of COVID-19 cases, it is important to support your gut health; therefore, more fruit, vegetables, and less meat/stress. The gut is where most of your immune system lies! In fact, about 70 percent of the immune system is housed in the gut, so making sure our digestive system is in tip-top shape can be key to addressing many of our bodily woes.

We had a bomb BBQ today which meant lots of meat (Chicken, beef burgers, turkey burgers, hot dogs) so I had to get creative to make sure most of my plate = vegetables. Therefore, I picked the sides: Corn on the cob, grilled onion/bell pepper skewers, and Kale Slaw. The Kale slaw was the winner at the whole BBQ. Super Quick and EASY. So let me give you the juice!

Ingredients 

  • Organic Kale
  • Organic Carrots
  • Mayo but I used Vegenaise
  • Honey
  • Dijon mustard
  • Apple cider vinegar
  • Celery seed

Instructions

Honey Mustard Dressing

  • Tablespoons mayonnaise
  • 1 Tablespoon honey
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 teaspoons apple cider vinegar
  • 1/4 teaspoon celery seed
  • Combine dressing ingredients in a small jar with a lid. Shake to thoroughly combine.

Salad

  • Toss kale, apples, carrots and honey mustard dressing in a large serving bowl.
